Scottish Chefs Conference 2008
Olly will be on the stage demonstration modern cooking practices for 600 chefs at the annual Scottish Chefs Conference.
Olly will be demonstrating alongside John Cambell and covering techniques such as slow cookery, homogenisation and pasteurisation of ice-cream, and modern menu structuring.
The conference will be held at the Citadel Leisure Centre in Ayr.

Restaurant Show 2008
Chef Olly Rouse is demonstrating at The Restaurant Show 2008. This is the largest trade show the industry runs and he is proud to be associated with pioneering companies such as Clifton Waterbaths and Signature FSE Induction Planchas.
Clifton say:
“Olly Rouse, formerly of the Vineyard at Stockcross, will be showing how the Water Baths and Signature FSE Induction Planchas are the ideal combination for professional kitchens. Olly will be demonstrating how to prepare Slow Cooked Beef Fillet with Horseradish mash and a smoked jus. This shows the diversity of the Water Bath and Induction Plancha to produce a fine dining dish with cutting edge techniques, consistency and ease.He will also be showing how useful the Water Bath/Induction Plancha combination is when dealing with lower cost cuts of meat by demonstrating Braised Pork Belly with Apple and Vanilla Puree. This method transforms both the texture and flavour of the Pork Belly into something out of the ordinary. ”
Clifton Food Range Managing Director Melvin Dickson says: “We always enjoy the Restaurant Show and are really looking forward to being able to show visitors the Water Baths in action alongside the Multivac and Signature FSE Induction Plancha. We hope it brings the whole sous vide process to life for chefs who are interested in slow cooking.”

Barclays
On Thursday 2nd October Chef Olly Rouse is hosting a lunch with his former Executive Chef John Cambell for Barclays Bank. The lunch will be held in the impressive sky scrapers 32nd floor for 350 diners and is being run in association wiht BaxterStorey.

Masterchef: The Professionals
Some of you may have seen Personal Chef Olly Rouse on episode 17 when two of the finalists worked alongside Olly, as he guided them through their competition for a place into the final. It was filmed in the Spring before Olly left The Vineyard at Stockcross where he was the Sous Chef.
On working with the hopefulls he said
“I think it’s great that these guys have oppotunities like this. I always thought the cooks who were not working in the best restaurants didn’t want it enough. That they didn’t have the passion for it; not like the cooks throwing themselves into the Michelin Starred kitchens. But I was wrong, and it’s great to see these chefs hungry for their next move.”
